During the Winter (December to February) the sap inside the tree freezes, and as the weather starts to warm up, there is a short time frame (approximately 6 weeks), where the sap thaws during the day, and refreezes at night. A small spout is "tapped" into the tree, and the thaw/refreezing process assists in pushing the sap out of the tapped spout.
